Five Brother's Cheese is produced by Gunn's Hill Artisan Cheese. This is a handcrafted washed-rind cow's milk cheese that combines traits from Gouda and another Swiss variety called Appenzeller. It is available at 8 months old. It is delicately aged on cedar wood planks adding robust flavors to the cheese. It has creamy and rich flavors with sweeter overtones and distinctive eyes throughout the body of the cheese.
Pairs well with white wines such as Chardonnay and Sauvignon Blanc and also Pilsner beers. Gunn’s Hill is a small, artisanal dairy located in Woodstock. Shep Ysselstein crafts small-batch cheeses made with a marked Swiss influence sourcing the milk for their line of cheeses from his family farm.
