Black garlic is a type of aged garlic that turns brown to due a Maillard reaction, rather than caramelization. It is made by heating whole bulbs of garlic over the course of several weeks and the end result is the beautiful sweet, earthy, umami-packed black garlic.
This black garlic is from August's Harvest and is conventionally grown. Owned and operated by Warren Ham, August's Harvest is one of the largest commercial garlic growers in Ontario. Warren has been growing garlic for over 30 years.
