Sauce - tomato, onion, bell pepper, bay leaf, olive oil, basil
Cheese- Pecorino Romano
Pasta - semolina flour, water
15 minutes prep time, Serves 2. Cook and Serve.
In a medium-sized pot, bring to a boil 2 litres of water and 1 tablespoon of salt.
Add Ascari pasta and cook for 2-3 minutes.
Add tomato sauce and 1tablespoon of pasta water to a frying pan, then slowly bring to a boil and simmer for 3 minutes (reducing slightly).
Strain pasta and add to your tomato sauce.
Toss your pasta thoroughly, making sure all your noodles are perfectly covered in sauce. Serve and generously garnish with pecorino romano!
