Ennis Maple is a non-certified Organic, low carbon operation with a wood powered evaporator. The Ennis family has been tapping for syrup in the 1900s. Some of their trees have been tapped by 5 generations of the Ennis family!
Their sugar bush is located on the eastern shore of Bennett Lake. Over the decades, the Ennis family has innovated their syrup making process and prioritize sustainability. They rotate the trees that are tapped to allow the maples to recover. They also utilize a high efficiency wood burning stove and use a process of reverse osmosis to remove 75% of the water from sap – cutting down on wood use!
