Cherry Clafouti
Clafouti may sound like a fancy dish but in reality it couldn't be more simple to make! A classic French dessert, clafouti is made by pouring a sweet batter, similar to crepe or pancake batter, over fresh fruit and baking it slowly. The eggy batter then bakes around the fruit, creating a light, airy and almost pudding or custard-like texture.
This dessert really is one of the easiest to whip up! It's made with just a handful of staple ingredients you likely have in your fridge and pantry right now including sugar, eggs, milk, flour, salt and butter, plus whatever fruit you'd like to add to it.
In this recipe, we used our in-season sweet cherries from Warner's Farms. The sweet and tart cherries add a beautiful pop of flavour and are the perfect contrast to the custard batter.
A tasty breakfast treat or dessert, try this Clafouti recipe if you've got some extra cherries on hand and are craving something a little more decadent than your average pancake!
Ingredients
- 1 tbsp Golden Dawn salted butter
- 1 1/8 cup 2% Harmony Organic milk or Harmony Buttermilk (for a more rich and tangy custard)
- 2/3 cup granulated sugar
- 3 x Homestead Farm eggs
- 1 1/2 tbsp vanilla extract
- 1/2 tsp salt
- 1/2 cup + 1 tbsp K2 Milling "Viking" AP flour
- 1 cup Warner's Farm cherries, pitted
- Optional: 1 x ChocoSol Vanilla Sea Salt bar, grated to garnish
Method
Preheat your oven to 350°F. Grease a pie plate, baking dish or cast iron skillet with some butter and lightly sprinkle with some white sugar. This will create a nice little sugary crust on the edges of the Clafouti which add a nice texture. Clafouti can be baked in any sort of baking dish or pan, we used a 6 x 9" pie plate for this Clafouti.
In a large bowl, whisk together your sugar, eggs, vanilla, and milk until fully incorporated. Whisk in your flour and salt until fully combined.
Pit your cherries and scatter them at the bottom of your baking dish or skillet. Pour the batter over the cherries and put your dish or skillet in your preheated oven.
Bake at 350°F for one hour until the custard is set. Remove from oven and let cool slightly. Sprinkle with some icing sugar, slice & serve!
