Barrie Hill Blueberry Crisp
We are LIVING for blueberry season and there's no better way to enjoy blueberries than in this super easy blueberry crisp recipe featuring our Barrie Hill blueberries, K2 Milling granola oats and AP Flour and Golden Dawn butter.
When baked, these berries transform into a delicious syrupy filling and the oat topping bakes into a perfectly golden sweet, buttery, crunchy crumble.
Add a heaping scoop of your favourite ice cream (classic vanilla bean is excellent on this crisp!) and enjoy warm for the ultimate summer treat.

Barrie Hill Farms has been growing high-bush blueberries since the early 1980's and is one of the largest blueberry farms in Ontario.
The flour and oats used to make the delicious crumble topping in this recipe are from K2 Milling. At K2 Milling, it is their goal to mill artisanal, high quality products that retains the unique properties of each grain used AND the nutrition and you can taste this in the flavourful crumble topping.
The silky smooth and flavourful "Golden Dawn" brand of butter comes to you from Alliston Creamery locating in Alliston, ON and is another secret ingredient that makes the crumble topping of this blueberry crisp extra flavourful.
Alliston Creamery is a small facility that works hard to produce butter using milk from the Niagara and Golden Horseshoe region to produce their rich, creamy Golden Dawn butter.
For the Filling
- 2 x pints Barrie Hill highbush blueberries
- 1 tbsp cornstarch
- 2 tbsp granulated sugar
- juice of 1/2 Mike & Mike's organic lemon
- 1+1/4 cup K2 Milling granola oats
- 1/2 cup AP Viking Flour
- 1/2 cup packed brown sugar
- 1/2 tsp ground cinnamon
- 6 tbsp (1/3 cup) salted Golden Dawn butter, cubed and at room temperature
Preheat the oven 375°F.
Pour your Barrie Hill blueberries into a medium sized bowl and add your sugar and cornstarch and toss to coat.
In a separate medium-sized bowl, combine your Granola oats, AP flour, brown sugar, cinnamon, and salt. Add in your cubed butter and using a fork, cut it in to combine until the mixture is crumbly.
Evenly top with the oat mixture. Bake for 40 to 45 minutes or until the berries are thick and bubbly and the oats are golden and crunchy. Serve warm or at room temperature.
